Yummy, Easy Recipe: Mediterranean Salmon on the Grill–Submitted by Your Fellow Aquacizer!

Aquacizers raved about this recipe!  Shared by Mary Beth during one of our recipe swaps, she says it’s healthy.  But everybody else just says it tastes great and is super-easy!  Here it is, in case you missed it.

Heart Healthy Mediterranean Salmon

1 red onion, sliced in rings

1 1/2 lb salmon filet

2 minced garlic cloves

1 tsp Herbes de Provence or dried Italian seasoning, crushed

1/4 tsp pepper

1 1/2 cups sliced plum tomatoes

6 oz jar marinated artichoke hearts, drained

1/2 c pitted kalamata olives, halved

Place onion rings in foil baking bag.  Arrange fillet over top.  Sprinkle w the garlic, herbes & pepper.  Top w tomatoes, artichokes, olives & herbes.  Seal the bag.  Place bag on grill rack over medium-hot coals.  Grill w lid down for 20 to 25 min or until fillet flakes w fork.  Make a slit in the bag to allow steam to escape.  Bon appetit!  Yields 6 servings
